Afternoon Tea Biscuits

A classic recipe to serve at gourmet afternoon tea parties.

Ingredients

4 cups flour

1/2 cup white sugar

1 tsp salt

8 tsp baking powder

2 blocks cold butter, cut into cubes

1¼ cups milk

2 eggs

Directions

1. Preheat oven to 450 °F.  

2. Place flour, sugar, salt and baking powder in a bowl.

3. Mix.

4. Cut margarine into flour mixture using a pastry blender.

5. Place milk and eggs in a separate bowl and beat with a fork.

6. Slowly add the milk and egg mixture to the flour mixture.

7. Mix with a fork, then with hands.

8. Knead the dough on a clean surface.

9. Using a rolling pin, roll out to 1/2-inch thickness.

10. Cut out small circles with a glass or cookie cutter.

11. Place the biscuits on a parchment paper-lined baking sheet for 10 minutes.

12. Remove from refrigerator and place in oven.

13. Bake for 13 to 15 minutes. Serve warm.
