Thai shrimp Cocktail with Mango Sauce

Try this with aromatic and vibrant white wines.

Ingredients

1 lb cooked large shrimp, peeled and deveined, with tails attached

1 tbsp + 2 tsp fish sauce

2 tbsp lime juice

1 tbsp honey

1 clove garlic, minced

1 small Jalapeno, seeded and finely diced

1 tbsp mint

1 tbsp basil

1 tbsp cilantro

1 very ripe mango, peeled and sliced

1/4 cup coconut milk

1 tbsp brown sugar, more to taste

Directions

1. Combine shrimp, 2 tbsp fish sauce, lime juice, honey, garlic, jalapeno, mint, basil and cilantro.

2. Toss well to coat.

3. Refrigerate and allow to marinade 30 minutes or up to one day in advance.

4. To serve, pour off excess marinade.

5. Make the sauce by placing mango, coconut milk, fish sauce and brown sugar in a blender.

6. Mix together until smooth.

7. If necessary, adjust the sweetness.
