Directions
1. Preheat oven to 350ºF and line a large rimmed baking sheet with foil.
2. Place the ham on the rack and score a grid pattern into the ham (about ½ inch deep).
3. Whisk together the beer, brown sugar, maple syrup, mustard, cornstarch, salt, allspice, cayenne pepper, Chinese five spice and black pepper. Brush ⅓ of the glaze generously over the ham and set the remainder aside.
4. Bake the ham, uncovered, for 1 hour.
5. Remove from oven and brush another ⅓ of the glaze over the ham and return to the oven. Bake for another hour or until the top is brown and crisp. Remove from oven.
6. Heat the remaining ⅓ of the glaze in a small saucepan until the alcohol has cooked out and the glaze is thick. Remove from heat and pour into a serving bowl.
7. Slice the ham to your liking and serve warm with glaze.
