Spanish Lamb Chops

Ingredients

1 8-point rack of lamb, frenched*, sliced into cutlets
2 tbsp olive oil
2 sprigs rosemary, leaves removed, finely chopped
Pinch salt
Pinch cracked pepper

Directions

1. Rub lamb cutlets with olive oil. Sprinkle with rosemary, salt and cracked pepper.
2. Place cast iron pan over medium-high heat. Grill for 3–4 minutes on each side depending on the thickness of the meat
3. Let rest for 10 minutes before serving.
*Remove the meat and fat between the bones.
