Directions
Set grill to medium- high.
Rub steaks with olive oil and season with salt and pepper.
Grill for 6 to 8 minutes per side. Let rest for 5 to 10 minutes before serving.
While the steak is cooking, place a sauté pan over medium-low heat.
Add butter and shallots. Sauté until soft.
Add red wine, beef stock and thyme leaves. Bring to a boil, then reduce to simmer.
When the sauce has reduced by half its volume, finish with salt and pepper to taste.
