Directions
1. Place in large saucepan over high heat, add olive oil and fry the chorizo for 2 minutes.
2. Lower heat, add chopped onion and simmer for 5 minutes.
3. Add red wine and increase the heat to a boil for 1 minute. Add tomatoes and paprika and boil for another 2-3 minutes.
4. Add the mussels, cover and steam for 2 minutes. Discard any mussels that don’t open.
5. Add coriander, stir until combined and they’re ready to serve.
