The Chicken Kofta features ground chicken, cloves of garlic and cayenne pepper. Best served with a drizzle of thick, Greek style yogurt for garnish
1 lb ground chicken
3 cloves garlic
1/4 cup parsley, chopped
1/4 cup white onion
2 tbsp fresh mint, chopped
2 tbsp ground coriander
1 tsp cumin
1 1/2 tsp cinnamon
1/2 tsp ground allspice
1/4 tsp cayenne pepper
1 tbsp salt
1/2 cup fine bread crumbs
Long skewers soaked in water
1 cup thick Greek-style yogurt, for garnish
1 cucumber, julienned
2 fresh tomatoes, diced
1. Mix all ingredients with chicken.
2. Form chicken around soaked skewers in long cylindrical shape.
3. Grill chicken kofta, or roast in oven, until cooked through.
4. To serve, place on plate or platter, drizzle with yogurt and top with cucumber and tomatoes.
