Directions
1. Combine mayonnaise, honey, lime juice and lime zest in a bowl. Mix thoroughly.
2. Add in the chicken and raisins. Mix.
3. Season mixture with salt and pepper to taste.
4. Cut raisin bread into 24 small triangles – the goal is for the sandwiches to be eaten in two bites.
5. Top the bread with curried chicken mixture.
6. Garnish each sandwich with sliced green onion.
7. Serve with lime pickle on the side.
