Sautéed Fiddleheads

Serve up a pint of New Brunswick’s iconic brewery’s Anniversary Ale with a plate of New Brunswick’s most famous ingredient, fiddleheads. Sauté them in lightly browned butter to match the richer malt flavours of this beer.

Ingredients

1 lb fiddleheads

4 tbsp butter

 

Directions

Rinse fiddleheads thoroughly, until the water runs clear. Trim any dead ends from the fiddleheads and pat dry with paper towels. Heat the butter in a large pan over high heat. When the butter starts to brown add the fiddleheads. Toss the fiddleheads to distribute the butter and reduce the heat to medium. Stir the fiddleheads occasionally.  They will take 3-4 minutes to cook through. Season with salt and pepper.
