Directions
1. Preheat oven to 400°F.
2. Add olive oil to a sauté pan. Place pan over medium heat.
3. Add carrots, onion, shallot and garlic.
4. Sauté for 10 to 12 minutes, stirring often.
5. When the vegetables are soft, set aside and let cool.
6. In a bowl, combine pork, cream, parsley, eggs, vegetables, salt and pepper.
7. Mix well, then let rest in a refrigerator.
8. Lay the first piece of puff pastry in a 9-inch pie dish.
9. Place the filling in the center and spread it evenly.
10. Add the second sheet of dough on top. Seal the edges.
11. Trim the pastry and make a hole in the center to let the steam escape.
12. Mix the egg yolk with a few drops of cold water and brush the top of the pie.
13. Place the pie in the oven for 20 to 30 minutes or until golden brown.
