Directions
Rhubarb Shrub
1. Place 2 cups chopped rhubarb in a container.
2.Top with sugar.
3. Cover with plastic wrap and refrigerate for four days.
4. Place a sieve over a bowl.
5. Place contents of container in the sieve and press with a wooden spoon to extract as much liquid as possible.
6. Top with 1 cup apple cider vinegar.
7. Transfer to a clean jar and refrigerate until ready to use.
Rhubarb Soda Mocktail
1. Fill a highball glass with ice.
2.Add rhubarb shrub
3.Stir to combine.
4. Top with club soda
