Directions
1. Preheat a gas or charcoal grill to a medium-high heat.
2. Blend the oil, lemon, cilantro, coriander, cumin, fennel, salt and pepper in a food processor to form a paste.
3. Mix 2 tablespoons with the cut carrots and mix the remaining paste with the lamb until thoroughly combined. Shape the lamb into ovals on prepared skewers.
4. Grill 5 minutes per side or until cooked through.
5. Grill the carrots, turning once, until tender.
6. Meanwhile, heat the butter over medium heat until browned and nutty.
7. Thinly shave the reserved carrots with a mandolin.
8. To serve, layer the cooked carrots, shaved carrots and feta on a plate along with the lamb skewers. Drizzle with brown butter and honey. Garnish with cilantro. Serve with naan, pita or flatbread.
