Directions
1. Place pan over medium-high heat. Add the vegetable oil and Serrano ham. Cook until crispy. Set on paper towel to drain excess fat.
2. Place avocados in a bowl and toss with lemon juice. Add the shrimp. Mix to combine.
3. Place bread slices on a platter. Spread with mayonnaise. Top with some shredded lettuce and equal amounts of the avocado and shrimp mixture.
4. Skewer with toothpick.
